We have done this kind of work in variety of ways in my organisation in the last few years. Some more scientific, some simpler - yet amazingly more effective in creating change !
The best recommendation i would have for you is to pick a Lominger (Lombardo and Eichinger) type card model of observable behaviour - and map actual behaviour occurence in the organisation through that device. what you then have is a map which u can turn back to the constituencies with and ask them the question " if someone walked into the room the and behaved like this what image, object, etc would you say has walked in..." so lead from a recognisable (by the people in the organisation) map of behaviour to their own interpretation of that into " so what kind of a culture does this look like .... what do we want to change etc...."
i presume u want to map the culture to do some thing with that map , not just for its own sake !
