Your opinion is common, but, actually, not accurate.
Take an average heterosexual man. This person is attracted to many women, and can have enjoyable sex with many women. But eventually, he may find one person he's willing to be sexually exclusive with, for a variety of reasons. He's still attracted to other women, and could even enjoy sex with them, but he decides to be sexually exclusive.
He may be giving up short women, Italian women, left-handed women, large-breasted women, all to be exclusive with one partner. It's a choice.
The same is true for bisexual people. They are attracted to, and can enjoy sex with, a lot of people, but they may choose to be exclusive with one. It's just as easy/difficult for bisexual people as it is for heterosexual or homosexual people.
