I believe the term was meant to be a [clever] reference to the rare but documented practices among certain African tribes of physically shrinking heads of special defeated opponents. Someone came up with the "cute" pun of calling psychiatrists head-shrinkers or shrinks. The term continues as popular slang as it also could be said that psychiatrist reduce the size of ones "ego" in the colloquial sense.
