Need immediate info on art therapy.

I'm a nursing student at the university of cincinnati. I have to give a presentation on art therapy. My professors say we need to be creative and involve the nursing students. We only have 15 minutes to present...how can I involve the students in a project pertaining to art therapy? My scenario is an 85 yr old widow who lives in a nursing home, she is lonely and also going blind. What type of art could I have for her to do as well as my peers? thanks so much for everyones help.
