The BC Art Therapy Association has a professional development series (for information go to http://www.arttherapy.bc.ca/profdev.html ) in Vancouver Canada that provides monthly workshops. The BC School of Art Therapy and the Kutenai School of Art Therapy I believe have courses that can be taken 'a la carte' and of course there are the standard training programs. There are useful links in this regard at http://www.arttherapy.bc.ca.
