The other(and more selfish part of thie question) is that if we begin opening ourselves up to adjuncting office visits with e-mail, and if you have 20 or more clients, and half of those use the e-mail in between sessions, how much "pro bono" work are you doing? I know for myself between my full-time job and personal life, I often don't have time to e-mail with personal friends. And I do know that typing out a thoughtful response to even one person can take a considerable amount of time. Multiply that by 50% of your caseload, and how much of your free time is being eaten up? Boundaries exist for the therapist's, as well as the client's, benefit.
