Mock sessions are difficult, no doubt. So is working "in a fish bowl" - very unnerving. I remember the feeling well. But I encourage students to treat it like it's real. Half the time we might be participating in "mock sessions" with real clients - who knows? Sometimes what they're telling us is fabrication. But it's not our place to make that judgement. We just take the material we are presented with and work with it. Student days are a great time to practice that. Also, the less anxious you feel the easier it will be for you to discover "what to ask". Catch-22, I know. Try to relax, and good luck!
